Sugar and Spice Doughnuts
1 1/2 cups gluten-free flour blend **
1 cup organic sugar
2 tsp baking powder
1/2 tsp salt
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs
1/4 cup melted coconut oil
1/2 cup milk (sub rice or coconut milk if dairy free)
1/2 cup organic sugar
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1/8 tsp ground cloves
1. Preheat oven to 350. Lightly oil two 6-mini doughnut pans with coconut oil.
2. In a large bowl, whisk together the flour blend, sugar, baking powder, salt, cinnamon, and nutmeg.
3. In a medium bowl, whisk together the eggs, oil, and milk until smooth. Add to the flour mixture and whisk until combined. Fill each mini-doughnut cup 3/4 full. Bake until golden and a toothpick inserted in the center comes out clean, about 15 minutes. Let cool slightly in the pans. Gently run a knife around the edges to loosen the cakes before turning them out onto a wire rack.
4. Meanwhile, blend the sugar spice ingredients together in a shallow bowl. Dredge the doughnuts in the sugar mixture while still warm to coat.
