1/2 cup extra-virgin olive oil
1/4 cup apple cider vinegar
3 cloves garlic, crushed
3 Tbsp fresh lemon juice
2 Tbsp chopped fresh parsley
1 tsp Himalayan salt
1/2 tsp Dijon mustard
1 Tbsp raw honey
Place all ingredients in a food processor and blend until smooth. Refrigerate any unused dressing. If dressing solidifies when cold, keep at room temperature for 30 minutes and stir or shake.
